Zrudiya M’chermla (Carrot salad)

It is an Algerian side dish that may accompany a steak or grilled fish.

Tips & tricks: Harissa and olive oil give this salad a very special taste.

4 servings – Prep. & cook time: 30 minutes

Ingredients:

1 lb. medium carrots, peeled and cut into coins

2 medium tomatoes

2 cloves of garlic

small bunch of parsley finely chopped

1 tsp cumin

1 tsp paprika

1 tbs tomato paste

4 tbs vegetable oil

3 sprigs thyme

Salt to taste

1/2 cup water

Step by step directions:

1. In a food processor, combine the tomatoes and garlic. Mix into puree.

2. In a medium saucepan, add the tomato garlic mixture, tomato paste, oil, salt,cumin, and paprika.

3. Heat over medium flame until it starts simmering. Stir gently.

4. Add 1/2 cup water, bring to boil, add the carrots, and reduce to simmer.

5. Cook approximately 15-20 minutes until carrots soft and most water evaporated.

6. Let cool, serve cold with chopped parsley garnish.
