Shl’ita (Grilled peppers Salad)

Algerian “grilled” salads: Summer in Algeria can be very hot sometimes, these types of salads are made in every Algerian home, served cold bring some freshness to the mouth. These grilled can range from mild and sweet to extremely spicy.

Sweet peppers and bell peppers are available all year long in Algeria. However, they are the most served vegetables during summer, especially made with fresh tomatoes and sliced onions, a dish known by every Algerian, it is called “shek’shouka”, it is becoming an international breakfast hit right now! You will find the recipe in this website, but here I will give you my recipe for the best Sh’lita you can make at home. Sh’lita can be served with bread, a side salad, or can even accompany a famous Algerian soup called “Chorba” also can be found in this book!

Tips & tricks: Garnish with few olives of your choice. Serve with flatbread (recipe here too) or any bread of your choice.

Ingredients:

4 sweet green peppers

1 clove of garlic

1 firm medium tomato

½ tsp ground pepper

¼ cup olive oil

Salt to taste 

Step by step directions:

Char the peppers over an open flame or gas stove, blackening on all sides

2. Briefly char the tomato over an open flame

3. Place the peppers in a freezer bag and leave on the counter for 20 minutes and allow to set.

4. Gently remove the charred pepper skin, cut the top of the pepper, and remove the seeds.

5. Gently peel off the tomato skin and finely chop pepper and tomato.

6. Finely chop garlic

7. Combine garlic, tomato, pepper with olive oil, salt and pepper and saute until water is evaporated and reduced

8. Serve cold, pour a tbs of olive oil on top of the salad, garnish with finely chopped
